With Mom’s Day simply across the nook, I needed to make my mother a particular deal with. My mother’s favourite chocolate bar known as an Eat-Extra bar. These bars are solely offered in Canada so until you reside in Canada you won’t have heard of them. They’re chewy, chocolatey, and jammed stuffed with peanuts! My mother mentioned she all the time thought it was all of the chocolate bars mashed into one good bar, haha!

Eat-Extra bars have dairy in them so I made a decision to veganize them and make the home made (is not home made all the time higher)? After just a few recipe checks, I nailed the chocolate-peanut butter taste and the caramel-chewy chocolate texture! I used to be so excited to offer these to my mother that I ended up gifting them to her early and he or she advised me that they tasted precisely just like the store-bought chocolate bar… however so a lot better!!

These vegan chocolate peanut bars are really easy to make and they are often frozen too. They’re gluten-free, and dairy-free so they’re very allergy pleasant. (For those who can not use peanuts, see the recipe notes for just a few different choices). These bars are nice for gifting, bringing to events, potlucks, or having fun with your self! I like to have one with a glass of white wine after dinner. Discuss scrumptious!!!

Oh and for those who’re a chocolate lover, you will LOVE my third cookbook which will probably be popping out later this 12 months! Keep tunnnnned! ????

Mix peanut butter and corn syrup.Learn how to Make Vegan Chocolate Peanut Bars:

Line a 9″ x 9″ baking pan with parchment paper, or use a silicon baking pan.

Combine the corn syrup and peanut butter in a medium pot over medium warmth.

Simmer for 5 minutes.

As soon as the combination begins to bubble, gently simmer for five minutes. Hold stirring typically and alter the warmth as wanted to make sure it does not burn. The combination may get a bit foamy.

Melt the chocolate chips into the peanut butter mixture.

After 5 minutes, take away the pot from the warmth. Add the chocolate chips and vanilla extract and stir properly to soften the chocolate into the combination.

Add the peanuts and spread into a pan.

Lastly, stir within the peanuts and blend properly. Pour into the ready pan and use a spatula to unfold it evenly. Permit to chill within the fridge for about 3 hours or till it’s chilled and set.

Lower into 16 bars (or no matter bar dimension you like). Retailer the vegan chocolate peanut butter bars in an air-tight container at room temperature for as much as 2 weeks or retailer them within the freezer.

Notes

Corn syrup substitute: for those who should not have golden or darkish corn syrup, mild corn syrup will even work, it simply has much less caramel taste. For those who choose to substitute corn syrup, an excellent substitute is golden syrup. The bars have to set like sweet so different sweeteners (equivalent to agave, or maple syrups) won’t work properly.
Peanut-free different: sub peanut butter for almond butter, cashew butter, or sunflower seed butter. Sub the peanuts for roasted and salted chopped almonds, roasted and salted cashews, or roasted and salted sunflower seeds.
